Am very happy to share the recipe of Kaju Katli after two unsuccessful attempts. When we put all our interest and love for cooking, there comes the success of the dish which would be more than expected. I had a great interest over this recipe after seeing in a cooking group. My first two tries dint turn out good as I missed the consistency. But those attempts dint fail with the taste.
It's always a happy note when someone tries our recipe and they comment over that. I felt that happiness when I posted this in cooking group and they had a try. Now sharing the recipe here on the blog. Have it a try and enjoy Kaju katli.
INGREDIENTS:
Cashew nuts - 1 cup
Sugar - 1/2 cup
Water - 1/4 cup
Ghee - for greasing

INGREDIENTS:
Cashew nuts - 1 cup
Sugar - 1/2 cup
Water - 1/4 cup
Ghee - for greasing
PREPARATION:
- Heat the wok and add 1/4 cup of water followed by sugar. Let the sugar dissolve and start to boil.
- Powder the cashews. Note that the cashews are not ground very finely as it will leave oil and turn sticky. Grind in pulse mode and stir the powder in the middle so that the finer part doesn't stick to the blender.
- Once when the Sugar solution is done add the cashew powder and mix well.
Note: See to that the water is not much added as we will lose the consistency. - Keep in low flame. It will start to thicken and leave the sides.Off the flame and allow it to cool a little.
- Now knead it like a dough by applying little ghee to your palms and flatten it between butter paper using a rolling pin.
- Once it cools cut into pieces.
