Korada

IMAGERY:

INGREDIENTS:
Shallots - 2 cups
Garlic - 8 to 10 crushed
Tamarind pulp - extracted from gooseberry size
Curry leaves - 1 spring
Red chilies - 2
Jaggery - 1/2 tsp
Turmeric Powder - 1/2 tsp
Chili powder - 1 tsp
Mustard Seeds - 1 tsp
Urad dal - 1/2 tsp
Oil - 2 tsp
Salt and water as required

PREPARATION:
  • Heat oil in a wok and add mustard seeds. When it sputters, add urad dal, red chili, curry leaves and crushed garlic.
  • Saute well and add the chopped shallots and fry till golden brown.
  • Add turmeric powder, chili powder, salt and tamarind extract followed by jaggery.
  • Add little water and cook until the oil leaves out at the sides.

Korada - ready to serve.... Best serve with Dosas...
